Food Safety in the Hospitality Industry
The European hospitality industry is large and fragmented. Due to the diversity of the sector, which largely comprises small independent businesses, it is alleged that communicating with caterers is diffucult. The lack of any representative trade organization which covers more than small part of the industry compounds this view. This book seeks to address all sectors of the industry with the aim of providing a framework arround which any business can build a food hygiene system, thus ensuring its proper operation.
